This has been a fascinating discussion. Thanks for starting it up PJ. I do use etched parts when they add to the model, or if it's something I can't make myself (engine grills come screaming to mind). Otherwise, I try to build the details myself. Like so many here, I am an "old school" modeler, brought up on the Shep Paine way of doing things. I remember, a long time ago, I had the DML Brummbar entered in a contest. I did use a fair amount of etching on it. I was up against a very nice 1/48 TBM for best in show. Several of the judges thought my model was better until I pointed out the Avenger was the old Monogram kit filled wits scratchbuilt details. Anyway, like many here have said, I like to make the part, but if an etched or resin part can be used instead, that's fine.
