Shredded beef for burritos and tacos tonight. Too hot to grill so through a flank steak in the slow cooker with the other junk and 6 hours later - yum

I didn't have my phone handy when I last ran my grill for burgers, brats, and hot dogs a few weeks ago... not to mention that I was busy as can be cooking for a house full of people... but today... New York strips, grilled to perfection...

Love the backyard bbq posts! Stik, man thats a heck of a yard!
Yall are gonna kill me for this but I traded in my grill for my grandmothers 70 year old cast iron pan. Makes GREAT steaks and burgers. And that good enough for me. Once you learn how to care and clean up cast iron its a breeze compared to the maintenance and cleaning a grill.

I'm a Ribeye kinda guy but at this point steak is steak , looked AWESOME Stik. I didn't take pix either but the wife cooked up some cabbage, onion, carrot, and bacon.....I was sceptical ...turns out it was DELISIOUS.. Thanks guys 30min before I get off the dialysis and can get eats. Darn you fellers

John, the New Yorks came to good... really good. A last BBQ for my son before he went back to Eilson AFB and USAF chow up in Alaska last weekend. James, thank you about our back yard. It is a great place to spend time now that the summer heat is over and more outdoor friendly daytime temps have arrived. I am learning about cleaning a cast iron flat top grill here, so I can relate on the difference between that and a grill for clean up. Mike, I gotta agree with you about too many greens in that meal of John's...

It's funny because I spent so much time learning to grill a good steak - and then I saw Alton Browns perfect steak. Done on a blazing hot cast iron skillet and finished in the oven. Big fan of the cast iron. And then there's the sous vide I've been playing with...

Much like my model building I often forget to photograph when I cook, but I sure do love food and cooking. Here's a WIP of our Cheater instant pot carnitas for street tacos and black beans on the side tonight. Easy meal but some prep. Started out tonight with a pork butt around 3.7 pounds. First we cube up the pork butt and put the instant pot on the sear setting. Get the fat nice and carmelized and the meat browned on all sides. Then we add the chicken stock to the pot and all the seasonings. and put the browned meat cubes back in as well. High pressure for 45 minutes is usually where we go from here. After that's done we pull the meat back out of the stock and shred it. Set some stock aside but leaving most of it in the instant pot as the base for the black bean dish. Add the beans to the stock in the instant pot, some rotel or fresh tomatoes from the garden if they are handy, along with onions, garlic and pepper. Get the instant pot going again. Once that is nearly done, we just take some of our reserved stock and splash it into a skillet, then crisp up the meat. Now we're ready for tortillas. Tortillas we just heat up on our panini press and then dish up the meat, some fresh cilantro and onion and a little salsa verde and some fresh lime juice. Delicious. As you can see, we broke out the fine China for the tacos. And the finished black beans and we're ready to eat.

That looks fantastic! What do you season the pork with? It’s so good. One of our favorites to make. I guess I didn’t say much about the meat seasoning did I? Nothing fancy at all. So the pork, I cube up and add nothing to out of the gate. Just brown it in some olive oil. Leave all the stuck on goodness in the bottom of the pot. Then you take a cup of chicken stock, sometimes homemade if we have it and sometimes just that better than bouillon paste if we don’t and deglaze the pot with that. Add the pork back in. Then we add fresh onion and garlic pulverized in the food processor, cumin, oregano and paprika. there are no measurements here, usually a couple garlic cloves and maybe half an onion but nothing specific. Then The juice of one decent sized orange and the juice of 1 big lime (or two small ones depending on what the grocery store has). That’s it. Then you let the instant pot work its magic to marry all the flavors. Good stuff.

TC, I've smoked several Thanksgiving turkeys over the years, but this one turned out the best one yet. As soon as the skin was cut, it just fell apart...
John, you should give smoking a try. The flavor added to the meat by smoking is soooooooo good!
Kyle, if you have a side smoker, you've been missing out by not using it yet. You're gonna love it once you try it out.
Folks keep telling me to try out the Traeger type, automated smokers... but I am one who finds it relaxing to tend the fire the traditional way, adding the wood and coals as needed.
